This Jartisann cheese is a firm variety that takes inspiration from Danish Danbo, English Cheddar, and the concept of flavored Gouda. The cheesemakers craft it using unpasteurized cow’s milk and subject it to a minimum aging period of four months. The Forest Tail Original variant of this cheese boasts a delightful combination of buttery, fruity, nutty, and wine-like flavors.

Initially, it was created to utilize leftover curd trimmings and repurpose them into a unique cheese. Over time, Forest Tail, the cheese’s name, has expanded to include various flavors like Caraway & Pepper (Classic), Pad Kapraow, Northern Thai Larb, Curry Masala, and Thai Green Curry. Forest Tail derives its name from the district where it originates, Hang Dong, Chiang Mai.
